Grown since the Middle Ages in the irrigated paddies of the Albufera, near Valencia, this short-grain rice is known for its high starch content. It's precisely this starch that lets it absorb up to three times its volume in liquid while staying firm rather than sticky — an essential quality for a good paella, where every grain should remain distinct.
