Description
Taleggio is an Italian cheese originating from Lombardy, in northern Italy. It holds Protected Designation of Origin (PDO/DOP) status and is made from cow’s milk. Its history is closely associated with Val Taleggio, the Alpine valley from which it takes its name. Square in shape, Taleggio has a thin, soft, pinkish to orange rind, characteristic of its aging process. Its ivory to pale-yellow paste is soft and becomes particularly creamy and melting as it matures. Despite the fairly pronounced aroma of its rind, its flavor is relatively mild, with milky, slightly tangy and fruity notes, becoming more intense with age. Widely enjoyed in Italian cuisine, Taleggio can be eaten on its own but is particularly suitable for cooking because of its excellent melting qualities. It can be used in risottos, polenta, pasta dishes, gratins, pizzas, sandwiches, and sauces, adding a rich flavor and creamy texture.
