- 1 kg potato(es)
- 50 g unsalted butter
- 50 g flour
- 300 ml beef stock
- 200 g cheese curds
- frying oil
- salt
Instructions
Preparing the fries:
- 1Peel the potatoes and cut them into even sticks about 1 cm wide.
- 2Rinse the potato sticks in cold water to remove the starch and pat them dry with a clean kitchen towel.
- 3In a deep fryer or a large saucepan, heat the oil to 160°C.
- 4Drop the potato sticks into the hot oil and cook for about 5 to 7 minutes until tender, but without coloring.
- 5Remove the potato sticks from the oil with a slotted spoon and place them on paper towel to remove excess oil.
- 6Increase the oil temperature to 180°C and drop the potato sticks back into the hot oil.
- 7Cook until golden and crispy.
- 8Remove the fries from the oil with a slotted spoon and drain on paper towel.
- 9Sprinkle the fries with salt.
Preparing the sauce:
- 10In a small saucepan over medium heat, melt the butter.
- 11Add the flour and whisk until fully absorbed.
- 12Gradually stir in the beef stock, whisking continuously to avoid lumps.
- 13Bring the sauce to a simmer and cook until it thickens to the desired consistency.
- 14Season with salt to taste.
Assembling the poutine:
- 15Arrange the hot fries on a serving plate, add the cheese curds on top, and pour the hot sauce over everything.
- 16Serve immediately.
