- 60 g sago
- 3 mango(es)
- 200 ml coconut milk
- 60 ml sweetened condensed milk
- 0.5 tsp vanilla extract
Instructions
Cooking the tapioca pearls:
- 1Put the sago or tapioca pearls in a saucepan filled with water and bring to a boil.
- 2Simmer for 20 minutes or until the tapioca pearls become completely translucent.
- 3Drain the tapioca pearls with a strainer.
- 4Rinse them under cold running water to cool them down and set aside in a bowl filled with cold water.
Preparing the mango sauce:
- 5Peel and cut the mangoes into small cubes.
- 6Set aside a few mango pieces for plating.
- 7Put the coconut milk, condensed milk, vanilla extract, and mango in a blender.
- 8Blend until smooth.
- 9Chill for at least 1 hour.
Plating:
- 10Add the tapioca pearls to the blended mango and mix until well coated in the mango sauce.
- 11Put the sago into bowls and add mango cubes before serving.
