Ingredients

  • 60 g sago
  • 3 mango(es)
  • 200 ml coconut milk
  • 60 ml sweetened condensed milk
  • 0.5 tsp vanilla extract

Instructions

Cooking the tapioca pearls:

  1. 1Put the sago or tapioca pearls in a saucepan filled with water and bring to a boil.
  2. 2Simmer for 20 minutes or until the tapioca pearls become completely translucent.
  3. 3Drain the tapioca pearls with a strainer.
  4. 4Rinse them under cold running water to cool them down and set aside in a bowl filled with cold water.

Preparing the mango sauce:

  1. 5Peel and cut the mangoes into small cubes.
  2. 6Set aside a few mango pieces for plating.
  3. 7Put the coconut milk, condensed milk, vanilla extract, and mango in a blender.
  4. 8Blend until smooth.
  5. 9Chill for at least 1 hour.

Plating:

  1. 10Add the tapioca pearls to the blended mango and mix until well coated in the mango sauce.
  2. 11Put the sago into bowls and add mango cubes before serving.
