Corned beef
Salted beef brisket, slow-cooked and traditionally preserved in a spiced brine. Popularized in the United States by Irish immigration, it is a key ingredient of the Reuben sandwich.
Description
Corned beef gets its name from the coarse grains of salt ("corns" in old English) used to cure it. Slow-cooked in its brine with spices such as bay leaf, peppercorns and mustard seed, it becomes extremely tender and easy to shred. In the United States, it became a staple of New York Jewish deli cuisine, most notably in the Reuben sandwich, paired with sauerkraut and melted cheese.
