Ingredients

  • 4 slice(s) Rye bread
  • 300 g Corned beef
  • 100 g Sauerkraut
  • 50 g Cheese
  • 1 Onion
  • 2 Egg yolk(s)
  • 50 g Ketchup
  • 10 g Hot sauce
  • 1 tsp Paprika
  • 2 tbsp Horseradish cream
  • 10 g Worcestershire sauce
  • 200 g Peanut oil
  • 1 pinch Salt

Instructions

Making the Russian dressing

  1. 1Finely chop the onion.
  2. 2Pour the chopped onion, egg yolks, ketchup, hot sauce, paprika, horseradish cream, Worcestershire sauce and peanut oil into a tall, narrow container.
  3. 3Blend with an immersion blender, moving it up gradually, until you get a smooth, creamy sauce.
  4. 4Adjust the seasoning with a pinch of salt if needed.
  5. 5If the sauce is too thick, thin it with a splash of room-temperature water.

Assembling the sandwiches

  1. 6Warm up the corned beef slices.
  2. 7Finely grate the cheese.
  3. 8Lightly toast the rye bread slices to give them some crunch.
  4. 9Spread a spoonful of Russian dressing on each slice.
  5. 10Divide the sauerkraut between two slices, then place the warm corned beef on the other two.
  6. 11Sprinkle with grated cheese, then grill again until the cheese is melted and lightly golden.
  7. 12Close each sandwich, press gently, cut in half and serve hot.
