Ingredients

  • 2 sheet(s) puff pastry
  • 2 apple(s)
  • 40 g raisins
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 6 tbsp breadcrumbs
  • 100 g sugar
  • 60 g unsalted butter
  • 1 egg(s)
  • powdered sugar

Instructions

Preparing the ingredients:

  1. 1Peel the apples, remove the cores, and cut into small cubes.
  2. 2Melt the butter.

Preparing the apfelstrudels:

  1. 3Preheat the oven to 180°C.
  2. 4Line a large baking sheet with parchment paper or a silicone mat.
  3. 5In a large bowl, mix the apples, raisins, lemon juice, and cinnamon.
  4. 6Set aside.
  5. 7Spread a smooth kitchen towel on the work surface and lightly dust with flour.
  6. 8Unfold a sheet of puff pastry onto the towel.
  7. 9Roll it out to form a 38x30 cm rectangle.
  8. 105 cm from a short edge, sprinkle 3 tablespoons of breadcrumbs in a 10 cm wide strip, leaving a 5 cm border at the top and bottom.
  9. 11Spread half of the apple mixture over the breadcrumbs.
  10. 12Drizzle the fruit with 2 tablespoons of melted butter and sprinkle with half of the sugar (50 g).
  11. 13Fold the short edge of the dough over the filling, tuck in the sides, then roll it up like a log, tucking in the edges as you go (use the towel to help roll the dough).
  12. 14Transfer to one side of the baking sheet, seam side down.
  13. 15Repeat the steps with the remaining dough and filling.

Baking the apfelstrudels:

  1. 16Place both strudels on the baking sheet, spacing them a few centimeters apart.
  2. 17Lightly brush both strudels with the beaten egg.
  3. 18Cut a few slits on top with a sharp knife.
  4. 19Bake for 25 minutes or until golden.
  5. 20Let cool completely on the baking sheet.
  6. 21Dust with powdered sugar before serving.
