  • 50 g rye flour
  • 10 g fresh baker's yeast
  • 25 cl milk
  • 3 egg(s)
  • 25 g unsalted butter
  • 5 g salt

Instructions

Preparing the ingredients:

  1. 1Separate the egg whites from the yolks.
  2. 2Melt the butter.

Preparing the blini batter:

  1. 3In a bowl, mix the flours and salt.
  2. 4Dissolve the yeast in a little warm milk and add it to the flour mixture.
  3. 5Mix well.
  4. 6Add the egg yolks and the remaining milk, mixing until you get a smooth, even batter.
  5. 7Add the melted butter and mix again.
  6. 8Cover the bowl with a clean cloth and let the batter rest for 1 hour in a warm place.

Cooking the blinis:

  1. 9Whip the egg whites to stiff peaks and gently fold them into the batter.
  2. 10In a hot, lightly oiled pan, drop small amounts of batter (about 1 tablespoon) to form circles 5 to 6 cm in diameter.
