- 250 g mushrooms
- 250 ml beef stock
- 300 g heavy cream

Instructions
Preparing the ingredients:
- 1Cut the beef into strips about 1.5 cm thick and season with salt and pepper.
- 2Slice the mushrooms and finely chop the onion.
Cooking the beef Stroganoff:
- 3In a large pan, heat the olive oil over medium-high heat.
- 4Add the beef strips and brown them for about 2 to 3 minutes on each side.
- 5Remove the beef strips from the pan and set aside.
- 6In the same pan, add the sliced onion and the mushrooms.
- 7Sauté for about 5 minutes, until tender.
- 8Add the thyme and paprika to the pan, then pour in the stock.
- 9Stir well to deglaze the pan and scrape up the browned bits.
- 10Add the cream and mix all the ingredients together well.
- 11Return the beef strips to the pan and simmer for about 10 minutes, until the sauce has thickened and the beef is cooked through.
- 12Adjust the seasoning with salt and pepper.
