For the dough:
- 250 ml water
- 400 g wheat flour
- 1 tsp salt
For the topping:
- 400 g ground meat
- 1 tomato(es)
- 0.5 onion(s)
- 1 clove(s) garlic
- 0.5 bunch parsley
- 0.5 tsp cumin
- 1 tsp paprika
- 1 tsp salt
- 1 tbsp tomato paste
- 1 drizzle olive oil
Instructions
Preparing the dough:
- 1Mix the flour, water, and salt in a large bowl.
- 2Knead the dough until smooth and elastic, for about 10 minutes.
- 3Shape the dough into a ball and place it in a floured bowl covered with a cloth.
Preparing the topping:
- 4Roughly chop the onion, garlic, and tomatoes.
- 5Place the vegetables in a blender with the parsley and blend until you get a purée consistency.
- 6Place the ground meat in a large bowl.
- 7Pour the aromatic mixture over the meat and add the tomato paste, paprika, cumin, salt, and olive oil.
- 8Mix well until you get an even mixture.
Assembling the lahmacun:
- 9Divide the dough into small balls (about 10) and roll out each ball into a circle 2 mm thick on a floured surface.
- 10Evenly spread 1 tablespoon of topping over each dough circle, smoothing well to the edges.
- 11Transfer the lahmacun one by one to a hot pan, topping side down, and cook over medium heat for 2 to 3 minutes.
- 12Flip the lahmacun and cook for 2 to 3 more minutes.
To serve:
- 13Let the lahmacun cool slightly.
- 14Serve warm, rolled up with fresh vegetables like tomatoes, cucumbers, and parsley, or with a squeeze of lemon if desired.
