Ingredients

  • 400 g shrimp
  • 2 lemongrass stalk(s)
  • 1 bird's eye chili(es)
  • 5 kaffir lime leaf(ves)
  • 20 g galangal
  • 0.5 lime(s)
  • 3 tbsp fish sauce
  • 50 g prik pao
  • 300 g cherry tomatoes
  • 100 g mushrooms
  • 200 ml coconut milk
  • 500 ml water

Instructions

Preparing the ingredients:

  1. 1Shell the shrimp and remove the dorsal vein.
  2. 2Set aside the shells and heads for the broth.
  3. 3Remove the central rib from the kaffir lime leaves and tear them into large pieces.
  4. 4Thinly slice the chili.
  5. 5Roughly slice the mushrooms.

Preparing the Tom Yum soup:

  1. 6Brown the shrimp shells and heads in a large saucepan with a little oil for about 2 minutes.
  2. 7Pour in the water and simmer for 5 minutes.
  3. 8Strain the broth and put it back in the saucepan.
  4. 9Add the galangal, lemongrass, kaffir lime leaves, chili, coconut milk, mushrooms, and prik pao chili paste.
  5. 10Bring to a boil and simmer for 4 to 5 minutes.
  6. 11Add the shelled shrimp and simmer for 5 minutes.

Plating:

  1. 12Just before serving, add the lime juice.
  2. 13Taste and adjust the seasoning if needed.
  3. 14Serve the soup piping hot in individual bowls with a little chopped cilantro.
