Ingredients

For the cookies:

  • 210 g cornstarch
  • 210 g wheat flour
  • 250 g unsalted butter
  • 65 g powdered sugar

For the dulce de leche:

  • 1 can sweetened condensed milk

Instructions

Preparing the dulce de leche:

  1. 1Remove the label from the can of condensed milk.
  2. 2Place the can of condensed milk in a pot of water and bring to a boil.
  3. 3Simmer for 2 hours, making sure the can stays fully covered with water at all times.
  4. 4After cooking, remove the pot from the heat and let the can cool completely in the water.

Preparing the cookies:

  1. 5In a bowl, sift the flour, cornstarch, and powdered sugar.
  2. 6Add the butter and rub it in to form a crumbly texture.
  3. 7Once the mixture is crumbly, shape it into a ball and refrigerate for 30 minutes.
  4. 8Place the dough on a floured work surface.
  5. 9Roll out the dough to about 3mm thick.
  6. 10Cut out circles of dough using a cookie cutter.
  7. 11Place them on a baking sheet and bake at 180°C for 10 minutes.
  8. 12Remove the alfajores from the oven and let them cool on a wire rack.
  9. 13Using a piping bag, fill the alfajores with dulce de leche.
  10. 14Dust the alfajores with powdered sugar before serving.
