About this dish
Chorizo al vino is a traditional Spanish dish showcasing chorizo, a spicy, smoked pork sausage, cooked in red wine. Originating from Spain, chorizo is famous for its rich, tangy taste, derived from the paprika and garlic used in its preparation. "Chorizo al vino" involves simmering slices of chorizo in red wine, allowing the flavors to blend and intensify. This cooking method creates a flavorful sauce and reduces the acidity of the wine, while infusing the sausage with aromatic depth. The dish is often served hot, as tapas or a starter, accompanied by crispy bread for dipping into the sauce. This simple yet delicious dish reflects the convivial spirit and rich culinary traditions of Spain.
