About this dish

Chorizo a la sidra is a traditional Spanish dish from Asturias, a region famous for its artisanal ciders. This flavorful dish showcases chorizo, a spicy Spanish sausage, slow-cooked in cider until tender and infused with flavor. The cooking process starts by lightly browning the chorizo to release its aromas, then adding sweet or dry cider, depending on preference. Everything is left to simmer gently, allowing the cider to reduce and concentrate its flavors while infusing the chorizo. The result is a rich-tasting dish, combining the spicy heat of the chorizo with the tangy sweetness of the cider, ideal for serving as tapas, accompanied by crispy bread to soak up the delicious sauce.
