Ingredients

For the chicken wings:

  • 600 g chicken wing(s)
  • 1 tsp salt
  • 0.5 tsp pepper
  • 1 tbsp baking powder

For the sauce:

  • 5 clove(s) garlic
  • 2 stalk(s) spring onion
  • 20 g fresh ginger
  • 2 tbsp gochugaru
  • 1 tbsp sugar
  • 2 tbsp gochujang
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 0.5 tbsp powdered chicken stock
  • 1 tbsp corn syrup
  • 2 tbsp mirin
  • 60 ml water

For serving:

  • toasted sesame seeds

Instructions

Preparing the chicken wings:

  1. 1Cut off the tip of the chicken wings.
  2. 2Separate the drumette from the wingette by cutting at the wing joint.
  3. 3Place the wings in a large bowl.
  4. 4Add the salt, pepper, and baking powder.
  5. 5Mix well until all the wings are coated with the seasoning.

Cooking the chicken wings (on the barbecue or in the oven):

  1. 6On the barbecue, place the wings on the cooking grate.
  2. 7Cook for about 20 minutes, turning the wings halfway through (the internal temperature should reach 71°C).
  3. 8In the oven, cook the wings at 200°C for 50 minutes, turning them halfway through.

Preparing the sauce:

  1. 9Once the wings are cooked, thinly slice the spring onions (keep the white part for cooking and the green part for garnish).
  2. 10Finely slice the garlic and ginger.
  3. 11In a bowl, mix the gochugaru, sugar, soy sauce, gochujang, oyster sauce, chicken stock, corn syrup, mirin, and water.
  4. 12Sauté the white part of the spring onions, garlic, and ginger for about 1 minute in a large pan.
  5. 13Then add the sauce.

Final preparation:

  1. 14When the sauce starts to boil, add the cooked chicken wings.
  2. 15Toss for a few seconds and set the wings aside on a plate.
  3. 16Add sesame seeds along with the sliced green part of the spring onions and serve.
