- 500 g short ribs
- 55 g brown sugar
- 1 pinch(es) white pepper
- 4 tsp sesame oil
- 4 tbsp mirin
- 3 tbsp honey
- 1 Asian pear(s)
- 120 ml soy sauce
- 6 clove(s) garlic
- 6 stalk(s) spring onion
Instructions
Preparing the ingredients:
- 1Peel and blend the Asian pear until puréed.
- 2Finely chop the garlic cloves and the spring onions.
Preparing the marinade:
- 3In a large bowl, mix the brown sugar, white pepper, sesame oil, mirin, honey, soy sauce, pear purée, and finely chopped garlic.
- 4Add the chopped spring onions.
- 5Cut the short ribs into thin slices, following the direction of the muscle fibers.
- 6Add the meat slices to the marinade and mix well so the meat is completely coated.
- 7Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight.
Cooking the beef kalbi:
- 8Remove the meat from the marinade and grill it on a barbecue or in a pan over medium-high heat.
- 9Be sure to turn the pieces of meat regularly to ensure even caramelization on each side.
