Ingredients
For the marinated beef
- 450 g beef sirloin (or another tender cut)
- 60 g soy sauce
- 30 g mirin
- 5 g sesame oil
- 3 g toasted sesame seeds
- 15 g Gochujang sauce
For the vegetables
- 100 g fresh shiitake mushrooms
- 150 g carrots
- 150 g baby spinach
- 50 g mung bean sprouts
- 15 g garlic
- 10 g fresh ginger
- 60 g vegetable oil
For the Gochujang sauce
- 60 g Gochujang paste
- 30 g mirin
- 10 g soy sauce
- 10 g sugar
- 10 g toasted sesame seeds
For plating
- 800 g Japanese white rice (cooked)
- 4 egg(s)
- 150 g kimchi
- 150 g cucumber
- 1 tsp toasted sesame seeds
Instructions
Preparing the Gochujang sauce
- 1Mix the Gochujang paste, mirin, soy sauce, sugar, and sesame seeds until you get a smooth sauce.
- 2Set aside.
Preparing the marinated beef
- 3Mix the soy sauce, mirin, sesame oil, and sesame seeds.
- 4Stir in a spoonful of the Gochujang sauce taken from the previous preparation, then mix.
- 5Thinly slice the beef and place it in a bowl.
- 6Pour the marinade over the meat.
- 7Mix to coat each piece evenly.
- 8Let marinate for 20 to 30 minutes.
Preparing the vegetables
- 9Clean and slice the mushrooms.
- 10Cut the carrots into fine julienne.
- 11Wash and drain the baby spinach and the bean sprouts.
- 12Finely chop the garlic.
- 13Grate the ginger.
- 14Thinly slice the cucumber.
Cooking
- 15Heat oil in a wok or large pan over high heat.
- 16Add the garlic and ginger, then sauté for a few seconds.
- 17Add the marinated beef and sear it quickly until just cooked.
- 18Set aside with its cooking juices.
- 19Add a little oil to the wok.
- 20Sauté the mushrooms and carrots for about 1 minute.
- 21Add the spinach, bean sprouts, and the remaining marinade.
- 22Continue cooking for 1 minute, until the vegetables are just tender while remaining slightly crunchy.
- 23Set aside.
- 24Fry the eggs to your desired doneness.
Plating
- 25Divide the hot rice among four large bowls.
- 26Arrange the beef, sautéed vegetables, and kimchi harmoniously.
- 27Place a fried egg in the center of each bowl.
- 28Add a spoonful of Gochujang sauce.
- 29Sprinkle with toasted sesame seeds.
- 30Serve immediately.
