Ingredients

For the marinated beef

  • 450 g beef sirloin (or another tender cut)
  • 60 g soy sauce
  • 30 g mirin
  • 5 g sesame oil
  • 3 g toasted sesame seeds
  • 15 g Gochujang sauce

For the vegetables

  • 100 g fresh shiitake mushrooms
  • 150 g carrots
  • 150 g baby spinach
  • 50 g mung bean sprouts
  • 15 g garlic
  • 10 g fresh ginger
  • 60 g vegetable oil

For the Gochujang sauce

  • 60 g Gochujang paste
  • 30 g mirin
  • 10 g soy sauce
  • 10 g sugar
  • 10 g toasted sesame seeds

For plating

  • 800 g Japanese white rice (cooked)
  • 4 egg(s)
  • 150 g kimchi
  • 150 g cucumber
  • 1 tsp toasted sesame seeds

Instructions

Preparing the Gochujang sauce

  1. 1Mix the Gochujang paste, mirin, soy sauce, sugar, and sesame seeds until you get a smooth sauce.
  2. 2Set aside.

Preparing the marinated beef

  1. 3Mix the soy sauce, mirin, sesame oil, and sesame seeds.
  2. 4Stir in a spoonful of the Gochujang sauce taken from the previous preparation, then mix.
  3. 5Thinly slice the beef and place it in a bowl.
  4. 6Pour the marinade over the meat.
  5. 7Mix to coat each piece evenly.
  6. 8Let marinate for 20 to 30 minutes.

Preparing the vegetables

  1. 9Clean and slice the mushrooms.
  2. 10Cut the carrots into fine julienne.
  3. 11Wash and drain the baby spinach and the bean sprouts.
  4. 12Finely chop the garlic.
  5. 13Grate the ginger.
  6. 14Thinly slice the cucumber.

Cooking

  1. 15Heat oil in a wok or large pan over high heat.
  2. 16Add the garlic and ginger, then sauté for a few seconds.
  3. 17Add the marinated beef and sear it quickly until just cooked.
  4. 18Set aside with its cooking juices.
  5. 19Add a little oil to the wok.
  6. 20Sauté the mushrooms and carrots for about 1 minute.
  7. 21Add the spinach, bean sprouts, and the remaining marinade.
  8. 22Continue cooking for 1 minute, until the vegetables are just tender while remaining slightly crunchy.
  9. 23Set aside.
  10. 24Fry the eggs to your desired doneness.

Plating

  1. 25Divide the hot rice among four large bowls.
  2. 26Arrange the beef, sautéed vegetables, and kimchi harmoniously.
  3. 27Place a fried egg in the center of each bowl.
  4. 28Add a spoonful of Gochujang sauce.
  5. 29Sprinkle with toasted sesame seeds.
  6. 30Serve immediately.

About this dish

Bibimbap, literally "mixed rice," is an iconic dish of Korean cuisine. Each vegetable is prepared separately before being arranged harmoniously over the rice, creating a final mix of contrasting colors and textures, enhanced by the Gochujang sauce.
