Ingredients

  • 500 g chickpeas (dried)
  • 5 clove(s) of garlic
  • 100 g onions
  • 30 g baking soda
  • 12 g salt
  • 3 g cumin
  • 2 g ground sweet paprika
  • 1 bunch(es) parsley
  • 0.5 bunch(es) of cilantro
  • Pepper
  • frying oil

Instructions

Preparing the chickpeas:

  1. 1Soak the chickpeas in cold water overnight, adding the baking soda.

Preparing the falafel:

  1. 2Drain the chickpeas and rinse them.
  2. 3Peel the garlic cloves and onions and roughly chop them.
  3. 4In a blender, blend the chickpeas, garlic, onions, salt, cumin, sweet paprika, parsley leaves, and cilantro (with the stems) together.
  4. 5Blend until you get an even paste.
  5. 6Let the falafel mixture rest for about 30 minutes in the refrigerator.

Frying the falafel:

  1. 7In a pot, heat the frying oil to 160°C over medium heat.
  2. 8Form falafel balls using a tablespoon.
  3. 9Drop the falafel into the hot oil and cook for about 5 to 7 minutes until golden.
  4. 10Remove the falafel from the oil with a slotted spoon and place them on paper towels to remove excess oil.
  5. 11Serve the falafel hot, with a sauce of your choice.
