Ingredients

  • 200 g dried chickpeas
  • 150 ml chickpea cooking water
  • 2 tsp baking soda
  • 150 g tahini
  • 10 g salt
  • 1 lemon(s)
  • 1 g ground cumin
  • 1 g sweet paprika
  • 1 g chili powder
  • 20 ml olive oil
  • 1 pinch(es) flaky sea salt
  • leaf(s) cilantro

Instructions

Preparing the chickpeas:

  1. 1Soak the dried chickpeas overnight in cold water.

Cooking the chickpeas:

  1. 2Drain the chickpeas and put them in a saucepan.
  2. 3Add cold water and the baking soda.
  3. 4Bring to a simmer and cook for about 1 hour.
  4. 5Check that the chickpeas are cooked by pressing lightly with your fingers; if they fall apart easily, they are done.

Preparing the hummus:

  1. 6Drain the chickpeas and put them in a blender.
  2. 7Add the cumin, paprika, chili powder, salt, pepper, 20 ml of lemon juice, the olive oil, the tahini, and 150 ml of the cooking water.
  3. 8Blend and adjust the texture by adding more cooking water or tahini.
  4. 9Plate with a drizzle of olive oil.
