- 3 bunch(es) parsley
- 4 tomato(es)
- 2 lemon(s)
- 2 stalk(s) spring onion
- 4 sprig(s) mint
- 30 g fine bulgur
- salt
- 1 pinch(es) Espelette pepper
- 6 tbsp olive oil
Instructions
- 1Place the bulgur in a bowl.
- 2Add the juice of 2 lemons.
- 3Season with salt and Espelette pepper.
- 4Cut the tomatoes into small dice and chop the parsley.
- 5Finely chop the mint.
- 6Finely chop the white part of the spring onions.
- 7Place the tomatoes on top of the bulgur, then the parsley.
- 8Place the mint in the middle of the parsley.
- 9Add the spring onions.
- 10Mix just before serving.
- 11Drizzle with olive oil and mix again.
- 12Adjust the seasoning with salt or lemon if needed.
