- 0.5 tsp white vinegar
- 50 g tomato sauce
- 0.5 tbsp flour
- 100 ml chicken stock

Instructions
Preparing the brava sauce:
- 1Finely chop the garlic cloves.
- 2Finely chop the onion.
- 3In a saucepan, heat a drizzle of oil over medium heat.
- 4When the oil is hot, add the chopped garlic and onion.
- 5Season with salt and pepper, then cook for about 10 minutes, until the onion has softened slightly.
- 6Then add the hot paprika and stir for about 5 seconds.
- 7Pour in the vinegar and stir for another 20 seconds.
- 8Then stir in the tomato sauce, mix again, and cook for another 5 minutes.
- 9Finally add the flour, which will give the patatas bravas sauce its consistency.
- 10Mix everything together and cook over medium heat for about three minutes to lightly brown the flour.
- 11Once the mixture is cooked, add the stock and mix.
- 12Pour the sauce into a blender and blend until smooth.
Preparing the potatoes:
- 13Peel the potatoes and cut them into cubes about 2 cm.
- 14Heat the frying oil in a large pot or a deep fryer to 180°C.
- 15Fry the potato pieces for about 10 minutes, until nicely golden and crispy.
- 16Once cooked, remove them and place them on paper towel.
Plating the patatas bravas:
- 17Lightly salt the potatoes and arrange them on a plate.
- 18Top with a few spoonfuls of brava sauce and serve immediately.
