- 1 kg pork belly
- 4 garlic clove(s)
- 1 shallot(s)
- 1 red chili pepper(s)
- 10 g fresh ginger
- 140 g brown sugar
- 5 tbsp fish sauce
- 5 tbsp soy sauce
- 2 lime(s)
- 1 l coconut water
- 1 stalk(s) spring onion
Instructions
Preparing the ingredients:
- 1Cut the pork into cubes about 3 cm.
- 2Roughly chop the shallot, chili pepper, and ginger.
Preparing the caramel pork:
- 3Place the garlic, shallot, chili, and ginger in a blender.
- 4Blend until you get a smooth paste.
- 5In a saucepan, cook the pork pieces for a few minutes.
- 6Once the pork pieces are browned, remove them and set aside on a plate.
- 7Put the sugar and 1 tablespoon of water in the saucepan and cook over medium heat.
- 8When the sugar colors and becomes foamy, add the juice of one lime and mix.
- 9Add the meat pieces and mix to coat them well with the caramel.
- 10Add the garlic, shallot, ginger, and chili mixture, then the fish sauce, and finally the soy sauce.
- 11Pour in the coconut water and mix well.
- 12Bring to a boil, then lower the heat and simmer uncovered over low heat for 1.5 hours.
- 13Once the meat is cooked, remove the saucepan from the heat, add the chopped spring onion, and pour in a little lime juice.
- 14Serve immediately with rice.
