Ingredients

  • 200 g cod roe
  • 100 g bread crumb
  • 1 tbsp apple cider vinegar
  • 0.5 lemon(s)
  • 100 ml olive oil
  • salt

Instructions

  1. 1Remove the thin skin from the fish roe using a knife.
  2. 2Put the fish roe in a blender.
  3. 3Moisten the bread crumb with a little water and add it to the blender.
  4. 4Add the vinegar and the juice of half a lemon.
  5. 5Blend everything until you get an even texture.
  6. 6Gradually add the olive oil while continuing to blend to create an emulsion.
  7. 7Taste and adjust the seasoning with salt and lemon, if needed.
  8. 8Continue blending until you get a creamy consistency, similar to a thick mayonnaise.
  9. 9Refrigerate before serving.
