- 250 g wheat flour
- 30 g cassonade (brown sugar)
- 1 packet baking powder
- 25 cl milk
- 125 g unsalted butter
- 2 egg(s)
- 1 pinch(es) salt
Instructions
Preparing the waffle batter:
- 1Separate the eggs.
- 2In a large bowl, mix the flour, baking powder, and pinch of salt.
- 3In another bowl, whisk the egg yolks with the milk until smooth.
- 4Add the liquid mixture to the flour, stirring constantly to avoid lumps.
- 5Add the melted butter and continue stirring until the batter is smooth.
- 6Whip the egg whites to stiff peaks.
- 7When the whites become foamy, gradually add the sugar and continue whisking.
- 8Once the whites are whipped, fold them into the waffle batter.
Cooking the waffles:
- 9Heat the waffle iron and oil the plates.
- 10Pour a ladleful of batter onto each plate of the waffle iron and close the lid.
- 11Cook the waffles for about 2 minutes until golden and crispy.
- 12Repeat until all the batter is used up.
