Ingredients

  • 1.5 kg mussels
  • 2 shallot(s)
  • 4 clove(s) garlic
  • 10 g unsalted butter
  • 8 sprig(s) cilantro
  • 15 cl dry white wine
  • 15 cl heavy cream

Instructions

  1. 1Rinse the mussels under cold water and discard any that are open or broken.
  2. 2Peel and finely slice the shallots and garlic cloves.
  3. 3In a large pot, melt the butter over medium heat.
  4. 4Add the shallots and garlic, then sauté for 2 to 3 minutes.
  5. 5Pour in the white wine and add the mussels to the pot.
  6. 6Add the cilantro sprigs, season with salt and pepper.
  7. 7Cover the pot and cook over high heat for 5 to 6 minutes, stirring occasionally.
  8. 8At the end of cooking, remove the mussels from the pot with a slotted spoon and keep them warm.
  9. 9Add the cream to the pot and heat over medium heat until the sauce has thickened slightly.
  10. 10Divide the mussels among plates and pour the sauce over them.
  11. 11Serve immediately with fries or fresh bread.
