  • 300 g sugar
  • 600 g water
  • 2 star anise
  • 1 cinnamon
  • 0.5 lemon(s)

Instructions

  1. 1In a saucepan, pour in the water, sugar, lemon juice, anise, and cinnamon stick.
  2. 2Peel the pears and put them in the saucepan.
  3. 3Make a parchment paper lid with a hole in the center and place it over the saucepan.
  4. 4Cook at a simmer for about 10 minutes.
  5. 5Check the pears' doneness with a knife.
  6. 6Remove the saucepan from the heat and let cool at room temperature.
  7. 7Chill until ready to use.
  8. 8Poached pears can be used to make a Bourdaloue tart or Poires Belle-Hélène.
