About this dish
Rougail saucisses is a traditional dish of Réunionese cuisine, a French island in the Indian Ocean. This dish is a flavorful blend of smoked, spiced sausages, paired with a fragrant, spicy tomato sauce, usually served with rice or bread. To prepare rougail saucisses, the sausages are first grilled or sautéed until fully cooked and slightly crispy on the outside. Meanwhile, a sauce is prepared with fresh or canned tomatoes, onions, garlic, ginger, chili, thyme, and other local spices. The sauce is cooked until it thickens and takes on a rich, spicy flavor. Once the sauce is ready, the sausages are added to the mixture and simmer gently to absorb the flavors. The result is a spicy, fragrant dish, offering a perfect balance between the heat of the chili and the sweetness of the tomatoes. Rougail saucisses is often served with white rice or bread, creating a comforting, deliciously spicy meal that reflects the richness of Réunionese cuisine and the influence of its many cultures. It is a dish appreciated by lovers of spicy flavors around the world.
