- 60 g shallot(s)
- 60 g pickle(s)
- 0.5 lemon(s)

Instructions
Preparing the ingredients:
- 1Peel and finely chop the shallot.
- 2Finely chop the capers and pickles.
Preparing the mayonnaise:
- 3In a bowl, put the mustard, egg yolk, lemon juice, salt, and pepper.
- 4Mix with a whisk.
- 5Pour in the sunflower oil in a thin stream while mixing to emulsify the mayonnaise.
- 6Once the mayonnaise has emulsified, add the olive oil and Espelette pepper and mix again.
Preparing the tartar sauce:
- 7In a bowl, mix the mayonnaise, capers, shallot, and chopped pickles.
- 8Add the juice of half a lemon and mix well.
