About this dish

Tapenade is a flavorful paste or spread originating from the Provence region in southern France. Its main ingredient is the olive, typically black, finely chopped or crushed to a rich, thick consistency. The preparation is enriched with capers, anchovies, garlic, lemon juice, and olive oil, giving tapenade its unique and complex flavor — salty, tangy, and umami all at once. Aromatic herbs such as thyme or rosemary may also be added. Versatile, tapenade is often spread on toasted bread or crostini as an appetizer, or used as a garnish or condiment to enhance pasta dishes, meat, fish, or vegetables. Its texture is both smooth and slightly grainy, and its color ranges from dark brown to deep black. Tapenade is a classic of Mediterranean cuisine, prized for its rich flavor and ease of preparation.
