Ingredients

  • 600 g beef heart
  • 60 ml vinegar
  • 2.5 tbsp aji panca chili paste
  • 1 garlic clove(s)
  • 2 tbsp vegetable oil
  • 1 tsp pepper
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 1 tsp Dijon mustard
  • 2 tbsp soy sauce
  • salt

Instructions

Preparing the ingredients:

  1. 1Cut the heart into strips about 1 cm thick and 3 to 4 cm long, and trim them.
  2. 2Peel and press the garlic using a garlic press.

Preparing the marinade:

  1. 3Place the pieces of heart in a large bowl.
  2. 4Add the garlic, aji panca paste, ground pepper, cumin, mustard, oregano, soy sauce, vinegar, salt, and oil.
  3. 5Mix and let marinate for at least 6 hours in the refrigerator.

Cooking the anticuchos:

  1. 6Remove the pieces of beef heart from the refrigerator.
  2. 7Soak the wooden skewers to prevent them from burning.
  3. 8Thread the pieces of beef heart onto the wooden skewers.
  4. 9Heat a grill or pan over medium-high heat with a little oil.
  5. 10Place the beef heart skewers on the grill and cook for about 4 minutes on each side.
  6. 11Serve hot with boiled potatoes and corn.
