- 500 g beef
- 3 onion(s)
- 1 orange chili pepper(s)
- 4 tomato(es)
- 1 clove(s) garlic
- 1 tsp dried oregano
- 2 tbsp cilantro
- 1 tbsp oyster sauce
- 6 tbsp soy sauce
- 6 tbsp beef stock
- 2 tbsp pisco
- 2 tbsp white vinegar
- salt
- pepper
- cumin
Instructions
Preparing the ingredients:
- 1Cut the tomatoes into wedges and remove the pulp to get thin tomato strips.
- 2Cut the onions into strips 2 cm wide.
- 3Remove the inside of the chili peppers and cut them into julienne strips.
- 4Finely chop the cilantro.
- 5Cut the beef into strips about 4 cm long.
- 6Place the beef strips in a bowl.
- 7Add the salt, pepper, and sliced garlic.
- 8Mix and let rest for 10 minutes.
Preparing the lomo saltado:
- 9In a pan or wok, heat vegetable oil over medium-high heat.
- 10Add the beef strips and sauté for about 15 seconds per side.
- 11Add the pisco and flambé.
- 12After 40 seconds of cooking, remove the meat and set it aside.
- 13In the same pan, add a little oil and cook the onions for 15 seconds.
- 14Add the julienned chili peppers and cook for 10 seconds.
- 15Add the tomatoes and cook for 15 seconds.
- 16Add the meat, then the soy sauce, oyster sauce, and oregano.
- 17Deglaze with the beef stock.
- 18Mix well and cook for about 2 minutes.
- 19Add the chopped cilantro off the heat.
- 20Mix well and serve immediately, with white rice and fries.
