- 300 g seafood
- 100 g shrimp
- 1 tbsp unsalted butter
- 1 clove(s) garlic
- 1 onion(s)
- 500 g cooked rice
- 25 cl white wine
- 4 tbsp aji panca chili paste
- 4 tbsp aji amarillo chili paste
- 1 red bell pepper(s)
- 100 g peas
- 100 g canned corn
- 1 carrot(s)
- 230 ml fish stock
- 40 g Parmesan
- 20 ml heavy cream
- fresh cilantro
Instructions
Preparing the ingredients:
- 1Finely slice the onion.
- 2Cut the bell pepper into quarters, then into thin strips.
- 3Cut the carrot into small cubes.
- 4Chop the fresh cilantro.
- 5Cook the carrots, corn, and peas in boiling water.
- 6Set the vegetable mixture aside once cooked.
Preparing the arroz con mariscos:
- 7Heat oil in a pan and add the seafood.
- 8Season with salt and cook for about 3 minutes.
- 9Remove the seafood from the pan and set aside.
- 10In the same pan, cook the onion until translucent.
- 11Add the garlic and cook for about 3 minutes.
- 12Add the aji panca, aji amarillo, and salt.
- 13Mix and cook for 5 minutes.
- 14Deglaze with the white wine.
- 15Let it reduce, then add the fish stock.
- 16Add the cooked seafood, then the butter, and mix.
- 17Add the bell pepper, then the cream.
- 18Add the grated Parmesan and the cooked rice, and mix.
- 19Finally, add the cooked vegetable mixture and the fresh cilantro.
- 20Serve hot with salsa criolla.
