- 24 shrimp
For the fritter batter:
- 100 g wheat flour
- 50 g cornstarch
- 1 tsp baking powder
- 150 ml water
- 0.5 tsp salt
- pepper
- 1 tbsp vegetable oil
For frying:
- frying oil
Instructions
Preparing the shrimp:
- 1Peel the shrimp, leaving the tail intact.
- 2Remove the dorsal vein.
Preparing the fritter batter:
- 3In a large bowl, mix the flour, cornstarch, and baking powder.
- 4Add the water, stirring until the mixture is smooth and even.
- 5Add the salt, pepper, and oil, and mix.
Frying the shrimp fritters:
- 6Heat the frying oil to 180°C in a pot.
- 7Dip the shrimp one by one into the fritter batter and immediately drop them into the oil.
- 8Fry the shrimp in small batches to prevent them from sticking together.
- 9Turn the shrimp fritters regularly in the oil and fry for about 3 minutes until golden.
- 10Remove the shrimp from the oil using a slotted spoon and place them on paper towels to remove excess oil.
- 11Serve the shrimp fritters hot, with sweet chili sauce, sweet and sour sauce, or soy sauce.
