Ingredients

  • 350 g chicken breast
  • 200 g raw peeled shrimp
  • 60 g shiitake mushrooms
  • 4 spring onion(s)
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 10 g fresh ginger
  • 2 tsp sugar
  • 1 tbsp salt
  • 1 tsp pepper
  • 8 tbsp cornstarch
  • 1 packet(s) wonton wrappers

Instructions

Preparing the ingredients:

  1. 1Finely chop the chicken and roughly chop the shrimp.
  2. 2Thinly slice the shiitake and spring onion.

Preparing the siu mai filling:

  1. 3In a large bowl, mix the chopped chicken, shrimp, shiitake, spring onion, soy sauce, oyster sauce, sesame oil, grated ginger, sugar, salt, and pepper.
  2. 4Add the cornstarch and mix well until the filling is smooth.

Shaping the siu mai:

  1. 5Take a wonton wrapper and place a tablespoon of filling in the center.
  2. 6Fold the sides of the wrapper to form a basket shape, leaving the filling visible in the center.
  3. 7Gently press the filling to pack it lightly.
  4. 8Repeat the process for the rest of the filling and wrappers.

Cooking:

  1. 9Place the siu mai in a steamer basket and steam them for about 10 to 12 minutes.
  2. 10Remove the siu mai from the steamer and serve hot.

Siu Mai, also spelled Shumai or Shaomai, are Chinese dumplings traditionally served during Dim Sum meals. Originating from Guangdong province, these delicious little dumplings have an open cylindrical shape at the top, revealing their filling. Their wrapper, usually made of thin wheat dough, encases a meat-based filling, most often a mixture of ground pork, shrimp, black mushrooms, ginger, and seasonings.
