Shrimp Dumplings
Chinese dumplings with translucent dough, filled with a shrimp-based filling.

For the shrimp filling:
- 600 g shrimp
- 80 g bamboo shoots
- 1 tsp salt
- 3 g fresh ginger
- 1 tsp sugar
- 2 tsp cornstarch
- 0.25 tsp white pepper
- 2 tsp sesame oil
For the dim sum dough:
- 220 g wheat starch
- 1 tsp salt
- 350 g boiling water
- 25 g cornstarch
Instructions
Preparing the ingredients:
- 1Peel the shrimp, leaving the tail intact.
- 2Remove the dorsal vein.
- 3Put the peeled shrimp in a container and add the salt.
- 4Mix and set aside for 5 minutes.
- 5Rinse the shrimp in cold water after resting.
- 6Cut the shrimp into small pieces.
- 7Cut the bamboo shoots into thin julienne strips.
- 8Grate the piece of ginger.
Preparing the shrimp filling:
- 9Put the shrimp in a bowl, add the salt, sugar, cornstarch, and pepper.
- 10Mix the preparation for about 3 minutes.
- 11Add the sesame oil, grated ginger, and bamboo shoots, then refrigerate.
Preparing the dim sum dough:
- 12Pour the wheat starch and salt into a bowl, then mix.
- 13Gradually add the boiling water while mixing to form a dough.
- 14Cover and let the dough rest for 5 minutes.
- 15Place the dough on the work surface.
- 16Gradually add the cornstarch and work it into the dough.
- 17Knead the dough for about 3 minutes once the starch is incorporated.
- 18Shape the dough into a log and divide it into 7 equal parts.
- 19Shape each piece of dough into a small log.
- 20Place the logs in a lightly oiled container, cover, and let rest for 10 minutes at room temperature.
Shaping the dim sum:
- 21Form pieces of dough about 10 g each and roll them into small balls.
- 22Flatten the dough balls to get thin round discs.
- 23Place 1 teaspoon of filling in the center of each disc.
- 24Fold the discs into a taco shape and close the dim sum by pleating the edges with your fingers to form nice folds.
Steaming the dim sum:
- 25Prepare a steamer by pouring in enough water, then bring the water to a boil.
- 26Cut squares of parchment paper or use cabbage leaves to prevent the dim sum from sticking to the steamer basket.
- 27Gently arrange the dim sum on the paper or leaves, making sure to leave space between each piece so they don't touch during cooking.
- 28Place the steamer basket over the boiling water, then cover with the lid to retain the heat and steam.
- 29Steam the dim sum for 4 to 6 minutes, or until the dough is slightly translucent and the filling is fully cooked.
- 30Serve the dim sum immediately, piping hot, with the sauce of your choice.
