Ingredients

For the filling:

  • 200 g chicken thigh(s)
  • 200 g egg noodles
  • 0.5 yellow onion(s)
  • 130 g green cabbage
  • 60 g carrot(s)
  • 2 stalk(s) spring onion
  • 0.5 red bell pepper(s)
  • 3 clove(s) garlic
  • 4 tbsp vegetable oil
  • 1 tsp toasted sesame oil

For the marinade:

  • 1 tsp soy sauce
  • 1 pinch(es) sugar
  • 0.5 egg white(s)
  • 1.5 tbsp cornstarch

For the chow mein sauce:

  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1.5 tbsp Shaoxing cooking wine
  • 1 tsp sugar
  • 0.25 tsp white pepper

Instructions

Preparing the ingredients:

  1. 1Finely slice the onion.
  2. 2Cut the cabbage, carrot, spring onions, and bell pepper into thin strips.
  3. 3Crush the 3 garlic cloves and chop them finely.
  4. 4Debone the chicken thighs, remove the skin, and cut into thin strips.

Marinating the chicken:

  1. 5In a bowl, add the chicken, soy sauce, sugar, half of the egg white, and the cornstarch.
  2. 6Mix well and set aside.

Cooking the noodles:

  1. 7Cook the noodles according to the package instructions.
  2. 8Rinse with cold water and let them dry on paper towels.
  3. 9Make sure to remove as much moisture as possible.

Preparing the sauce:

  1. 10In a small container, mix the soy sauce, dark soy sauce, oyster sauce, Shaoxing wine, sugar, and white pepper.

Preparing the chow mein:

  1. 11Make sure you have a large enough wok; otherwise, prepare the chow mein in 2 batches.
  2. 12In a large wok, heat 3 tbsp of oil over high heat.
  3. 13When the oil is hot, add the chicken and cook for 2 to 3 minutes until cooked through and nicely browned.
  4. 14Once the chicken is cooked, remove it from the wok and set aside.
  5. 15In the same wok, add the garlic and onion.
  6. 16Stir-fry for 30 seconds or until fragrant.
  7. 17Add the cabbage, red bell pepper, carrot, and spring onions, and stir-fry for 2 minutes over high heat.
  8. 18Once the vegetables are cooked but still crunchy, remove them from the wok and set aside.
  9. 19Add 1 tbsp of oil to the wok and stir-fry the noodles for 2 minutes over high heat to lightly brown them.
  10. 20Add half of the sauce, the vegetables, and the chicken.
  11. 21Stir-fry everything for 2 minutes while mixing.
  12. 22Pour in the rest of the sauce and mix until all the ingredients are fully coated with sauce.
  13. 23Drizzle with sesame oil off the heat and serve immediately.
