- 200 g toor dal
- 850 ml water
- 4 clove(s) garlic
- 1 piece fresh ginger
- 1 green chili pepper(s)
- 1 tsp cumin seeds
- 1 tbsp coriander seeds
- 2 cloves
- 1 red onion(s)
- 4 tomato(es)
- 60 g ghee
- 1 tsp ground turmeric
- 0.5 tsp ground coriander
- 0.25 tsp garam masala
- 0.5 tsp Kashmiri chili powder
- 1 tbsp kasoori methi
- 1 bunch cilantro
- salt
Instructions
Preparing and cooking the toor dal:
- 1Rinse the toor dal in cold water until the water runs clear.
- 2In a pot, put the rinsed dal, the turmeric, and 850 ml of water.
- 3Bring to a boil, then reduce the heat and simmer until the dal is tender (about 30 to 45 minutes).
- 4Stir occasionally to prevent it from sticking to the bottom.
Preparing the dal tadka:
- 5In a mortar, crush the ginger, garlic, and chilies.
- 6Cut the onions and tomatoes into cubes.
- 7While the dal is cooking, heat 2 tablespoons of ghee in a pot.
- 8Add the cumin seeds, coriander seeds, and cloves.
- 9Sauté until they begin to crackle.
- 10Add the red onion and sauté until golden.
- 11Add the garlic, ginger, and green chili.
- 12Sauté for a few minutes.
- 13Add the tomatoes and cook until very tender, about 10 minutes.
- 14Once the dal is cooked, pour it into the tadka mixture and mix well.
- 15If the dal is too thick, add a little water to reach the desired consistency.
- 16Adjust the seasoning with salt.
- 17Add the cumin, ground coriander, garam masala, Kashmiri chili, and kasoori methi, and mix.
- 18Simmer together for a few minutes so the flavors blend.
- 19Add the freshly chopped cilantro and serve hot with rice or naan.
