Ingredients

Main ingredients:

  • 500 g squid
  • 3 clove(s) garlic
  • 2 bird's eye chili pepper(s)
  • 2 stalk(s) spring onion
  • 700 ml frying oil

Ingredients for the marinade:

  • 1 egg(s)
  • 1 tbsp Shaoxing cooking wine
  • 1 tbsp cornstarch
  • 300 g rice flour
  • salt
  • white pepper

Instructions

Preparing the squid:

  1. 1Rinse the squid well in cold water.
  2. 2Gently pull on the head to remove the innards.
  3. 3Cut just below the eyes to separate the tentacles, which can be used in the recipe.
  4. 4Remove the squid's pen (a transparent cartilaginous structure) from inside the body.
  5. 5Remove the thin purple skin covering the squid's body.
  6. 6Rinse the body and tentacles again under cold water.
  7. 7Score the inside of the squid in a crosshatch pattern and cut into pieces of 3 to 4 cm.

Preparing the other ingredients:

  1. 8Finely chop the garlic.
  2. 9Finely chop the white part of the spring onions and the chilies.

Preparing the jiao yan you yu:

  1. 10Place the squid pieces in a bowl with the egg and mix.
  2. 11Add the cornstarch, Shaoxing wine, salt, and white pepper.
  3. 12Mix well to coat all the pieces.
  4. 13Place the rice flour in a large container.
  5. 14Coat the squid pieces in the flour until fully covered.
  6. 15Set the squid pieces aside on a rack.
  7. 16Preheat a deep fryer or a deep pan with peanut oil to 180°C.
  8. 17Once the oil is hot, fry the squid in batches until golden and crispy.
  9. 18In a pan, cook the garlic, spring onions, and chilies over medium heat for one minute.
  10. 19Place the fried squid pieces in the pan.
  11. 20Adjust the seasoning with salt and pepper and mix well.
  12. 21Serve immediately with white rice.
