- 6 chicken thigh(s)
- 6 g fresh ginger
- 3 clove(s) garlic
- 0.5 tsp salt
- 0.25 tsp pepper
- 2 tbsp cooking sake
- 2 tbsp soy sauce
- 200 g potato starch
Instructions
Preparing the ingredients:
- 1Debone the chicken thighs and cut them into 4 pieces.
- 2Finely chop the garlic and ginger.
Preparing the marinade:
- 3Put the chicken pieces in a bowl.
- 4Add the grated ginger, chopped garlic, salt, ground pepper, sake, and soy sauce.
- 5Mix until the marinade coats all the chicken pieces.
- 6Let marinate for 1 hour.
Cooking the karaage:
- 7Put the potato starch on a plate and coat the chicken pieces with it.
- 8In a deep fryer or a pan, heat the frying oil to 180°C.
- 9Fry the chicken pieces in small batches until golden and crispy, for about 5 minutes.
- 10Drain on paper towels to remove excess oil.
- 11Repeat until all the chicken pieces are used up.
- 12Serve hot with lemon wedges and Japanese mayonnaise.
