- 400 g cooked white rice
- 350 g pork belly
- 2 carrot(s)
- 100 g peas
- 2 shiitake mushroom(s)
- 1 onion(s)
- 2 egg(s)
- 3 stalk(s) spring onion
- 5 g fresh cilantro
- 1 tbsp soy sauce
- 1 tbsp sunflower oil
- salt
- pepper
Instructions
Preparing the ingredients:
- 1Cut the pork belly, carrots, shiitake mushrooms (previously rehydrated), and onion into small dice.
- 2Roughly chop the cilantro.
- 3Cut the spring onions into rounds.
Cooking the meat and vegetables:
- 4Cook the pork belly in a wok or large pan for about 5 minutes.
- 5Remove the cooked pork belly from the pan and add a little oil.
- 6Sauté the onions until translucent.
- 7Add the carrots and mushrooms.
- 8Add the carrots, peas, mushrooms, and onion. Sauté for a few minutes.
- 9Cook for 1 minute, stirring regularly.
- 10Add the cooked pork belly and peas, then mix.
Assembling the Cantonese rice:
- 11Add the cooked rice and mix.
- 12Add the soy sauce, salt, and pepper.
- 13Mix well.
- 14Push the rice to the side of the wok.
- 15Crack in the eggs, scramble them, and cook lightly before mixing them with the rice.
- 16Cook while stirring for 2 minutes.
- 17Add the spring onion, mix well, and put the Cantonese rice into individual bowls.
- 18Add the chopped cilantro on top of the rice before serving.
