Ingredients

For the dashi:

  • 1 l water
  • 1 handful(s) katsuobushi

For the miso soup:

  • 70 g miso
  • 500 g silken tofu
  • 2 stalk(s) spring onion

Instructions

Preparing the dashi:

  1. 1Boil the water in a saucepan, then add the dried bonito flakes (katsuobushi).
  2. 2Simmer for 2 to 3 minutes and set aside.

Preparing the miso soup:

  1. 3Strain the dashi and bring it to a boil.
  2. 4Thinly slice the green onions.
  3. 5Cut the tofu into 1.2 cm dice.
  4. 6Add the tofu cubes to the dashi and reduce to low heat.
  5. 7Dissolve the miso paste in the dashi, being careful not to let it boil.
  6. 8Add the green onions and remove from the heat.
