For the beef stew:
- 1.2 kg beef chuck
- 2 tbsp vegetable oil
- 2 carrot(s)
- 2 onion(s)
- 1 stalk(s) of celery
- 2 bay leaf(ves)
- 500 cl beef stock
- 1 tbsp Worcestershire sauce
- 50 g wheat flour
- salt
- pepper
- 3 tbsp cornstarch
For assembly:
- 200 g cheddar
- 1 puff pastry sheet(s)
- 1 shortcrust pastry sheet(s)
Instructions
Preparing the ingredients:
- 1Cut the beef into cubes of about 2.5 cm.
- 2Cut the carrots and celery into small dice.
- 3Thinly slice the onions.
Preparing the beef stew:
- 4Coat the pieces of beef with the flour.
- 5In a large pot, heat the oil over medium heat.
- 6Add the pieces of meat and brown them on all sides.
- 7Remove the pieces of beef from the pot.
- 8Sauté the onions in the pot for about 2 minutes.
- 9Add the carrots and celery.
- 10Cook for another 2 to 3 minutes.
- 11Add the pieces of beef back to the pot and mix.
- 12Add the beef stock, Worcestershire sauce, and bay leaves.
- 13Bring to a boil, then reduce the heat and simmer for about 2 hours, until the meat is tender.
Baking the pastry:
- 14Preheat the oven to 180°C.
- 15Roll out the shortcrust pastry over the bottom of a pie dish.
- 16Prick the base of the pastry with a fork.
- 17Blind bake the pastry at 180°C for about 30 minutes.
Assembling and baking the pie:
- 18Once the stew is ready, mix the cornstarch with a little water in a bowl.
- 19Pour the cornstarch mixture into the stew and stir to thicken the sauce.
- 20Remove the bay leaves.
- 21Pour the meat and sauce into the pie dish over the pre-baked pastry base.
- 22Sprinkle the grated cheddar on top.
- 23Cover the pie with the puff pastry, making sure to seal the edges well.
- 24Bake for about 30 minutes, until the crust is golden and crispy.
