Ingredients

  • 420 g cooked rice
  • 4 egg(s)
  • 4 slice(s) ham
  • 2 stalk(s) spring onion
  • 0.5 tbsp cooking sake
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 tbsp rapeseed oil
  • 0.5 tsp salt
  • pepper
  • 0.5 cucumber(s)
  • beni shoga

Instructions

Preparing the ingredients:

  1. 1Thinly slice the spring onions.
  2. 2Cut the ham into small cubes.
  3. 3In a small bowl, beat the eggs with a pinch of salt.
  4. 4Crumble the cooked rice with your hands.
  5. 5If the rice was just cooked, spread it on a large plate and let it cool completely to remove as much moisture as possible.

Cooking the fried rice:

  1. 6In a wok or large pan, heat the oil over high heat.
  2. 7Once the oil is very hot, add the beaten eggs.
  3. 8Cook for about 30 seconds, stirring quickly.
  4. 9Push the eggs to the side of the wok and add the cooked rice, ham, salt, and pepper next to the eggs.
  5. 10Using a spatula, break the eggs into small pieces and stir everything for 3 minutes.
  6. 11To separate the rice grains more easily, add the sake (if using).
  7. 12Add the soy sauce and sake.
  8. 13Stir everything for 1 minute.
  9. 14Adjust the seasoning if needed with soy sauce and salt.
  10. 15Off the heat, add the sliced spring onions and sesame oil.
  11. 16Mix one last time.
  12. 17Serve with a few slices of cucumber and beni shoga.
