- 1 onion(s)
- 4 clove(s) garlic
- 200 ml olive oil
- 600 g tomato passata
- 3 ball(s) mozzarella
- 0.5 bunch(es) basil
- 50 g parmesan
Instructions
Preparing the ingredients:
- 1Dice the onion finely.
- 2Finely chop the garlic.
- 3Cut the eggplants lengthwise into slices 1 cm thick and season both sides with salt.
- 4Place the eggplant slices in a colander over a bowl and set aside for 15 minutes.
Preparing the parmigiana:
- 5Heat 2 tablespoons of olive oil in a saucepan and sauté the onion and garlic.
- 6Add the tomato passata and cook for 15 minutes.
- 7In a large pan, heat the oil and cook the eggplant slices in batches so as not to overcrowd the pan.
- 8In a baking dish, spread some of the tomato sauce, then add cooked eggplant slices to completely cover the bottom.
- 9Then add some of the mozzarella, basil leaves, and grated parmesan.
- 10Continue layering until all the eggplant is used.
- 11Top with parmesan.
- 12Place the dish in an oven preheated to 180°C for 25 minutes or until the cheese is golden.
