Ingredients
For the fried chicken:
- 1 whole chicken(s)
- 2 tbsp rice vinegar
- 4 clove(s) garlic
- 100 g tapioca flour
- 2 tbsp powdered chicken stock
For the tomato sambal:
- 12 shallot(s)
- 3 tomato(es)
- 10 bird's eye chili(es)
- 1 tbsp sugar
- 1 tsp salt
- vegetable oil
Instructions
Preparing the fried chicken:
- 1Cut the chicken into 12 pieces.
- 2Place the chicken pieces in a bowl.
- 3Add the crushed garlic (use a garlic press), the chicken stock powder, the vinegar, and the tapioca flour.
- 4Mix until all the chicken pieces are well coated.
- 5Cover with plastic wrap and let marinate for at least 30 minutes.
Preparing the tomato sambal:
- 6Cut the shallots and chilies in half.
- 7Remove the stems from the tomatoes and cut them into quarters.
- 8Heat the oil and sauté the shallots and chilies until fragrant and tender.
- 9Put the cooked shallots and chilies into a blender with the salt and sugar.
- 10Blend coarsely.
- 11In the same pan, sauté the tomatoes until tender.
- 12Add the tomatoes to the blender with the shallots and chilies.
- 13Blend until the desired consistency is reached.
- 14Sauté the sambal in the pan with a little oil for several minutes until it looks glossy with oil.
Cooking the chicken:
- 15Heat the oil to 170°C in a sauté pan.
- 16Fry the chicken in the hot oil for about 15 minutes, until golden.
- 17Check that the internal temperature reaches 74°C.
- 18Remove excess oil using paper towels.
- 19Serve the fried chicken with tomato sambal and rice.
