Ingredients
For the rawon
- 500 g beef chuck
- 2 bay leaf(s)
- 5 kaffir lime leaf(s)
- 1 tomato(es)
- 1.5 l water
- 10 g salt
- 10 g powdered beef stock
- 20 g sugar
- 2 g pepper
- 1 stalk(s) spring onion
For the spice paste
- 6 clove(s) garlic
- 10 shallot(s)
- 5 keluak nut(s)
- 4 candlenut(s)
- 30 g fresh turmeric
- 50 ml vegetable oil
- 50 ml water
For the sambal
- 20 bird's eye chili(es)
- 3 clove(s) garlic
- 50 ml water
- 2 g salt
- 5 g sugar
- 2 g powdered stock
- 1 dash vegetable oil
For plating
- 2 salted egg(s)
- 1 handful(s) mung bean sprouts
- 1 tbsp fried shallots
- 1 lime(s)
Instructions
Preparing the rawon
- 1Cut the beef chuck into large cubes, 2 to 3 cm.
- 2Cut the tomato into wedges.
- 3Peel the garlic, shallots, and turmeric.
- 4Put the garlic, shallots, keluak nuts, candlenuts, turmeric, oil, and water in a blender.
- 5Blend until you get a smooth, even paste.
- 6Heat a drizzle of oil in a large pot.
- 7Sauté the spice paste over medium heat until fragrant and the oil rises to the surface.
- 8Add the lemongrass, kaffir lime leaves, and bay leaves.
- 9Continue cooking for a few minutes to develop the aromas.
- 10Pour in the water and bring to a boil.
- 11Add the beef, tomato, spring onion, salt, powdered stock, sugar, and pepper.
- 12Cover and simmer for about 1 hour until the meat is very tender.
Preparing the sambal
- 13Finely chop the red chilies and garlic in a blender.
- 14Heat a little oil in a small saucepan.
- 15Sauté the chili and garlic mixture for a moment.
- 16Add the water, salt, sugar, and powdered stock.
- 17Let reduce over low heat until slightly thickened.
- 18Set aside.
Plating
- 19Rinse the mung bean sprouts.
- 20Cut the lime into wedges.
- 21Divide the beef pieces among serving bowls.
- 22Generously ladle in the hot broth.
- 23Add the mung bean sprouts, half a salted egg, a few fried shallots, and a lime wedge.
- 24Serve the sambal on the side or add it according to preference.
- 25Enjoy immediately with steamed white rice.
