For the ikan bakar
- 1.2 kg sea bream
- 1 onion(s)
- 4 clove(s) of garlic
- 30 g fresh ginger
- 30 g fresh turmeric
- 20 g fermented shrimp paste (terasi)
- 60 ml oyster sauce
- 45 g tomato purée
- 15 g chili sauce
- 2 lime(s)
- 200 ml water
- 1 pinch(es) sugar
- 1 pinch(es) salt
- 1 pinch(es) pepper
For the spicy soy sauce
- 150 g Kecap manis
- 6 red chili pepper(s)
- 1 clove(s) of garlic
- 1 lime(s)
For the side
- 1 bowl(s) of white rice (cooked)
- 1 cucumber(s) ((sliced))
Instructions
Preparing the marinade
- 1Peel the onion, garlic, ginger, and turmeric.
- 2Blend the onion, garlic, ginger, turmeric, and shrimp paste with a drizzle of oil until smooth.
- 3Sauté this paste in a saucepan until cooked and the oil rises to the surface.
- 4Add the tomato sauce, chili sauce, oyster sauce, water, sugar, salt, and pepper.
- 5Let reduce over low heat until you get a slightly thick marinade.
- 6Set aside.
Preparing the sweet soy sauce
- 7Trim and finely slice the small red chili peppers.
- 8Peel and crush the garlic clove.
- 9Juice the lime.
- 10Mix the sweet soy sauce, chili peppers, garlic, and lime juice until you get an even sauce.
- 11Keep chilled until ready to serve.
Preparing the fish
- 12Clean and scale the fish.
- 13Score both sides of the fish to allow the marinade to penetrate the flesh well.
- 14Dry the fish with paper towels.
- 15Lightly salt both sides.
- 16Generously brush the fish with the marinade.
- 17Let marinate for 30 minutes.
Cooking the fish
- 18Preheat a barbecue or a grill pan over medium heat.
- 19Grill the fish for a few minutes on each side until half cooked.
- 20Brush regularly with the marinade during cooking.
- 21Gently turn the fish and continue cooking until the flesh is tender, fully cooked, and the skin is slightly caramelized.
Plating
- 22Place the grilled fish on a serving platter.
- 23Drizzle with a little lime juice.
- 24Serve immediately with white rice, a few cucumber slices, and the spicy sweet soy sauce.
