Ingredients

For the sauce:

  • 250 g peanuts
  • 200 g cashews
  • 200 g palm sugar
  • 20 g salt
  • 1 potato(es)
  • 600 g water
  • 40 g tamarind
  • 20 g garlic
  • 10 g bird's eye chili(es)
  • 150 g vegetable oil
  • 20 g galangal
  • 4 tbsp kecap manis
  • 3 lime(s)

For the garnish:

  • egg(s)
  • lettuce
  • tomato(es)
  • potato(es)
  • carrot(s)
  • krupuk

Instructions

Preparing the ingredients for the sauce:

  1. 1Grind the peanuts and cashews.
  2. 2Boil the potatoes in water.
  3. 3Set aside one cooked potato for the sauce; the other potatoes will be used for the vegetable garnish.
  4. 4Cut the galangal into large pieces.

Preparing the sauce:

  1. 5Heat the oil in a wok.
  2. 6Fry the garlic, galangal, and chilies for about 20 seconds.
  3. 7Put the fried mixture in a blender.
  4. 8Add the peanuts, cashews, and water.
  5. 9Blend until you get an even mixture.
  6. 10Add the palm sugar, the potato, and the salt, and blend again.
  7. 11Mix the tamarind paste with a little water.
  8. 12Pour the tamarind-water mixture into the blender and blend.
  9. 13Fry the mixture in the wok until you reach the desired consistency.
  10. 14Add the kecap manis and set aside in a container.

Assembling the gado gado:

  1. 15Add the lime juice to the sauce and serve with lettuce, tomatoes, potatoes, cucumber, carrots, hard-boiled eggs, fried tempeh, fried tofu, krupuk, lontong, and fried onions.
