For the chicken skewers:
- 600 g chicken breast
- 3 clove(s) garlic
- 5 shallot(s)
- 1 tsp coriander seeds
- 30 g galangal
- 5 tbsp kecap manis
- 1 lime(s)
- 1 tsp salt
- 1 tsp powdered chicken stock
- 1 tsp pepper
- 300 g water
For the peanut sauce:
- 120 g peanuts
- 3 clove(s) garlic
- 5 shallot(s)
- 4 bird's eye chili(es)
- 50 g palm sugar
- 3 kaffir lime leaf(ves)
- 500 g water
- 2 tbsp kecap manis
- salt
- frying oil
Instructions
Preparing the ingredients:
- 1Cut the chicken fillets into small pieces or thin strips and set aside in a bowl.
- 2Peel the garlic and shallots.
Preparing the marinade:
- 3In a blender, put the garlic, shallots, galangal, coriander, and water.
- 4Blend until smooth and add the mixture to the chicken.
- 5Then add the kecap manis, lime juice, salt, chicken stock, and pepper.
- 6Mix and let marinate for at least 1 hour, ideally overnight for best results.
Preparing the peanut sauce:
- 7Fry the peanuts in a pan with a little frying oil until lightly browned.
- 8Roughly chop the chilies, shallots, and garlic cloves and fry them for a few minutes in the pan.
- 9In a blender, put the peanuts, garlic, shallots, and chilies with a little water.
- 10Blend until smooth.
- 11In a saucepan, heat the frying oil and sauté the sauce over medium heat.
- 12Add the palm sugar, kaffir lime leaves, kecap manis, and salt.
- 13Mix well and simmer over medium heat, stirring occasionally, until the sauce thickens.
Cooking the skewers:
- 14Grill the chicken skewers for about 4-5 minutes on each side, until fully cooked and lightly caramelized.
- 15Serve immediately with peanut sauce.
