Ingredients

For the caramel syrup:

  • 160 g sugar
  • 20 cl water

For the cendol:

  • 25 g white rice flour
  • 100 g soy starch
  • 40 g sugar
  • 0.5 tsp pandan extract
  • 400 ml coconut milk

Instructions

Preparing the sugar syrup:

  1. 1Pour the sugar into a saucepan over medium heat and caramelize it.
  2. 2Off the heat, add the water to the caramel.
  3. 3Put back on the heat, boil for 5 minutes, then set aside.

Preparing the cendol:

  1. 4Fill a large bowl with cold water and ice cubes.
  2. 5In a large saucepan, pour in the soy starch, white rice flour, sugar, 1 liter of water, and the pandan extract
  3. 6Mix well and cook over medium heat, stirring continuously.
  4. 7When the mixture thickens, reduce the heat and continue cooking for another 5 minutes while stirring.
  5. 8Transfer a small portion of the mixture into a slotted spoon held over the bowl of water.
  6. 9Using a spatula, press on the batter to create strands that will solidify on contact with the cold water.

Assembling the es cendol:

  1. 10Put pieces of cendol in a glass, add a little caramel syrup and coconut milk.
  2. 11Serve very cold.
